Roasted Curry Daikon Radish by
Ingredients
1 lb daikon radish, cut into 1/2" pieces
2 thai chili peppers, chopped (can sub for chili powder)
2 tbsp olive oil
1 Tbsp curry powder
2 tsp kosher salt
1/2 tsp garlic powder
1/4 tsp onion powder
1/8 tsp splash of lemon juice
Chopped parsley and green onion for garnish
Instructions
Preheat oven to 400°F. Combine daikon, chili peppers, oil, and seasoning in a bowl and toss to coat. Arrange in a single layer on a baking sheet and bake for 25-30 minutes or until golden brown. Flip once during bake time. Garnish with parsley and green onion.
