My Mom's Zucchini Bread by

Ingredients
3 eggs
1 cup oil
2 cups sugar
2 cups grated zucchini
3 teaspoons vanilla
3 cups flour
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon nutmeg
1/4 teaspoon cloves
3 teaspoons cinnamon
1 teaspoon salt
*optional* 1 cup nuts or chocolate chips
Instructions
Beat the eggs until light
Add oil, sugar, and zucchini
Mix
Add the rest and mix until well blended.
Cook on 350°F for 1 hour or until toothpick or knife comes out clean.
Makes 2-3 regular-sized loaves.
