Sweet Potato Soufflé by
Ingredients
Regular Recipe:
3 cups mashed sweet potatoes
1 cup brown sugar
1 cup evaporated milk
1/2 stick oleo (melted)
2 eggs
1 1/2 t vanilla
1 1/2 t cinnamon
Thanksgiving Recipe:
4 ½ cups mashed sweet potatoes (appx. 4 potatoes)
1 ½ cup brown sugar
1 ½ cup evaporated milk
¾ stick butter, melted
3 eggs
2 1/4 tsp. vanilla
2 1/4 tsp. cinnamon
Instructions
Put all 7 ingredients in blender or mix well with a mixer. Poor into a baking dish.
Mix topping (below) until crumbly. Top and bake at 350 degrees for 1 hour.

1 cup brown sugar
1/2 c flour
1 stick oleo
Thanksgiving Recipe:
1 ½ cup chopped pecan nuts
1 ½ cup Brown sugar
¾ cup flour
1 ½ stick butter
Reduce the amount of Brown Sugar to make it less sweet.
