Lactation Cookies by
This recipe is specifically intended for nursing mothers. Chickpea flour is full of protein, fiber, and iron. Chia seeds are an excellent source of Omega-3 fatty acids as well as fiber and protein. Fennel has shown to help decrease colic and soothe tender tummies.
Ingredients
2 T. ground chia seeds
6 T. water
1/2 cup butter, softened
1/2 cup sugar
1/2 cup brown sugar
1/2 t. vanilla
1-1/2 cup chickpea flour
1/2 t. baking soda
1/2 t. salt
1/2 t. ground fennel seed
1/2 t. cinnamon
1-1/2 cup quick oats
2 T. brewers yeast
Instructions
Preheat oven to 350 degrees. Combine ground chia seeds with water and let stand 5 minutes; they will become the consistency of eggs. In a large bowl, cream butter and sugar. Add chia mixture and vanilla, then mix well. In a medium bowl, combine flour, baking soda, salt, fennel seed, cinnamon and brewers yeast. Whisk or sift together. Add dry ingredients to butter mixture and stir just until combined. Add oats and stir together. Drop batter onto a greased baking sheet using spoons or balling with your hands (shape cookies because the oats make them more structured, so they don't "melt" into circles the way other drop cookies do). Bake for 12 minutes then let sit to cool. Enjoy!
