Sausage Cheese Grits Casserole by Lori Bogan-Potts

Ingredients

1 cup ground grits 3 cups water 1/2 teaspoon salt 1 1/2 cups grated cheddar cheese 1/4 cup butter 4 eggs lightly beaten 1 cup milk 1 pound ground sausage

Instructions

Preheat oven to 350°. Grease 3 quart baking dish.

In 3 quart saucepan bring water and salt to boil. Slowly add grits stirring constantly for 3 or 4 minutes. Turn down heat to low, cover grits and continue to cook for 15 - 20 minutes. Remove from heat.

Stir in 1 cup cheese and butter until melted. Add milk, eggs and sausage, blend well. Pour mixture into prepared dish. Sprinkle with remaining cheese. Bake 1 hour or until cheese is golden brown. Cool 10 minutes before serving. Serves 6 to 8.
