Crock Pot Barbacoa - Kiy by
Ingredients
2 lbs Boneless Beef Chuck Roast
2 tsp Sauce from Chipotle Peppers in Adobo Sauce
2 Peppers from Chipotle Peppers in Adobo Sauce
1/2 cup Beef Broth
2 tbsp Apple Cider Vinegar
4 tsp Lime Juice
2 tsp Minced Garlic
5/8 tsp Oregano
11/8 tsp Cumin, ground
11/8 tsp Salt
11/8 tsp Black Pepper
4/3 Whole Bay Leaves
Instructions
Cut the beef into 2" strips and set aside
Add the chipotle peppers and adobo sauce to a blender.
Add the beef broth to the blender.
Blend well and pour into crock pot.
Add the Apple Cider Vinegar and Lime Juice to the crock pot. mix well.
Add the Minced Garlic, Oregano, Cumin, Salt, and Black Pepper to the crock pot. mix well.
Add the beef to the crock pot. Mix well.
Add the bay leaves to the crock pot and submerge.
Cook for 6-8 hours (low) or 4-6 hours (high).
remove the bay leaves, and shred with tongs.
