Shepherd’s pie Tater tot casserole by Ed

Ingredients

1 ½ lbs ground beef (or ground lamb for classic shepherd’s pie) 1 small onion, diced 2 cloves garlic, minced 1 bag (12 oz) frozen mixed vegetables (peas, carrots, corn, green beans) 1 can (10.5 oz) cream of mushroom soup 1 cup beef broth 1 tbsp Worcestershire sauce 1tsp dried thyme ½ tsp black pepper 2 cups shredded cheddar cheese 1 bag (32 oz) frozen tater tots

Instructions


🔥 Preheat oven to 375°F (190°C).
🥩 In a large skillet, cook ground beef with onion and garlic until browned. Drain grease.
🥕 Stir in mixed veggies, cream of mushroom soup, beef broth, Worcestershire, thyme, and pepper. Let simmer 5 minutes.
🥘 Spread mixture evenly into a greased 9x13 casserole dish.
🧀 Sprinkle 1 cup of cheese over meat mixture.
🥔 Arrange tater tots in a single layer on top.
🧀 Sprinkle remaining cheese over tots.
🍽️ Bake uncovered 35–40 minutes, until tots are golden and crispy.
🌿 Let cool slightly, then serve hot!
