Hushpuppies by Lori Bogan-Potts

Ingredients

6 cups peanut oil 1 cup cornmeal 4 teaspoons baking powder 1/2 cup all purpose flour 1 teaspoon salt 1 teaspoon sugar 1/4 teaspoon red pepper 1 egg 1/2 cup milk 1 small diced white onion 1/2 cup sliced green onions

Instructions

Using a deep pot, preheat oil for frying to 350°.

Mix dry ingredients in bowl. In another bowl, mix egg and milk, then add into the dry mixture. Stir in white and green onions.

Drop the batter, 1 teaspoon at a time, into the oil. Dip the spoon in a glass of water after each hushpuppy is dropped in the oil. Fry until golden brown, turning the hushpuppies during the cooking process.
