Beets are a sweet root vegetable that come in red, yellow and right varieties. They're low in calories and fat, and high in dietary fiber, vitamins and minerals. Red Beets are great for cardiovascular health as their unique red-pink pigment antioxidants have been found to offer protection against coronary artery disease, stroke, lower cholesterol and even have anti-aging effects. Beet greens (tops) are a great source of carotenoids, flavonoid anti-oxidants and Vitamin A. Vitamin A is essential for maintaining healthy mucus membranes and skin. And flavinoids help protect from lung and oral cavity cancers. Beet tops contain several times more nutrients than the actual beet root - so don't toss out those greens - eat them in your salad instead of your usual lettuce.
Ingredients
3 Fresh Beets with tops (greens)
Pine Nuts
Goat Cheese (optional)
Fruit of your choice (blueberries, clementines or raspberries)
Vinaigrette of choice (raspberry, blueberry etc.)
Instructions
Remove stems and greens from the beets. Soak in cool water to remove soil and other debris. Flash steam or boil beets until tender. Let cool. Peel skin and chop beets in cubes. Strain greens and rip into bite size pieces. Toss beet greens, and beets in vinaigrette of choice. Top with goat cheese crumbles, pine nuts and berries. ENJOY!
