Quinoa with Broccoli and Bacon by TRobinson

Ingredients

3/4 cup uncooked quinoa, rinsed 1 cup water 1 teaspoon olive oil 2 cups fresh broccoli florets 2 tablespoons water 2 teaspoons olive oil 1/8 teaspoon salt 2 bacon slices, cooked and crumbled

Instructions

Heat quinoa in a saucepan over medium-high heat; sauté 2 minutes. Add 1 cup water; bring to a boil. Cover, reduce heat, and simmer 13 minutes. Remove from heat; let stand 2 minutes. Heat 1 teaspoon olive oil in a saucepan over medium-high heat. Add broccoli florets; sauté 2 minutes. Add 2 tablespoons water; cover and reduce heat. Cook 2 minutes. Combine quinoa, broccoli, 2 teaspoons olive oil, salt, and bacon.
