Mixed Greens with Pecans, Goat Cheese and Dried Cranberries by cpeirson

Ingredients

1/4 c red wine vinegar 1 T Dijon mustard 1 T chopped fresh thyme 3/4 c olive oil 2 5-oz bags of baby greens 7 oz dried cranberries (7 oz) 1 small red onion, very thinly sliced 8oz c glazed or honey roasted pecans or walnuts 5.5oz of soft goat cheese

Instructions

Whisk vinegar, mustard and thyme in small bowl. Grandually whisk in oil. Season dressing with s&p.

Mix greens, cranberries and onion in large bowl. Mix in enough dressing to ciat. Sprinkle woith nuts and cheese.
