Simple Egg Fried Cauliflower - kiy by
Ingredients
3.5 oz Cauliflower
1 Egg
1 Green Onion (about 3/5 oz)
1 tsp Olive Oil
Seasoning
1/8 tsp salt
1/2 tbsp soy sauce
1 tbsp Chicken Stock (if you double the recipe - match the soy sauce)
* Other seasoning options include oyster sauce or cooking oil - avoid a strong flavor oil such as extra virgin olive oil.
Instructions
Prep the Cauliflower
==================
Turn the cauliflower into cauliflower rice
* don't make the rice too small - don't over-shred/grind
Add 1/4 cup of water and microwave the cauliflower for 5 mins at 50% power to steam the cauliflower.
Let cool for 10+ minutes and then refrigerate for 4+ hours.
Prep the Green Onion

Dice the white bulb of the green onion.
Separately dice the green stalk of the green onion.
Make the Egg Fried Cauliflower
==============================
1) Set stove to medium. In a wok/pan add the olive oil and the diced white bulb. This makes green onion oil. cook until you can smell the green onion.
2) In a bowl, mix the egg into the cauliflower.
3) Add the seasoning (salt, soy sauce, and chicken stock) and mix well.
4) When the green onion oil is finished, increase the heat to High.
5) Add the egg/cauliflower mix to the wok/pan. Mix constantly while cooking.
6) Once the cauliflower is fully covered and starting to separate, add the rest of the green onion and cook for an additional minute.
