Caveman Chili by
Ingredients
1 pound ground beef
1 pound chorizo
1 pound Polk Cajun sausage, diced
2 tbsp olive oil
8 cloves garlic
1 can tomato paste
8 oz can tomato sauce
4 oz can green chiles, with liquid
1 tbsp fish sauce
2 tbsp Worcestershire sauce
1/4 cup chili powder
1/4 cup smoked paprika
2 tbsp cumin
1 tbsp oregano
2 tsp salt
1 tsp black pepper
1 bay leaf
hot sauce to taste
Instructions
1. Saute diced sausage in skillet until browned. Drain grease.
2. Saute ground beef and chorizo in same skillet until browned. Drain grease.
3. Add olive oil to skillet, and saute onion until caramelized, about 20 minutes, then add garlic and cook for about a minute, until fragrant.
4. Add meat and onions to slow cooker. Add remaining ingredients except for bay leaf. Mix well.
5. Add bay leaf to middle of chili.
6. Cook 6-8 hours on low or 3-4 hours on high. Remove bay leaf before serving.
