Mini Frittatas by mstemmler

Ingredients

18 eggs 4 oz sour cream 1/2 c heavy cream 1 bl pork sausage 1 beefsteak tomato, diced shredded hashbrowns 6 scallions, sliced baby spinach, chopped shredded cheddar

Instructions

Preheat oven to 350.

Whisk first 3 ingredients in a large bowl with s&p until well combined.

Spray muffin tin liberally with cooking spray. Spoon/ladle into each tin the egg mixture, about 2/3 the way up. Add to each: 1 TBSP hashbrowns, 1 TBSP sausage, 1/2 TBSP spinach, 1/2 TBSP tomato. Top each with 1 TBSP cheddar and sprinkle scallions.

Bake 15-20 min or until set in the middle and golden brown on top.
