Pecan Balls (GF) by
Ingredients
1/2 cup butter
2 tbsp. sugar
1 tsp vanilla (GF)
1 egg
1 cup sifted flour (cup-to-cup mix)
1 cup finely chopped pecans
2/3 cup powdered sugar (to roll cookies in)
Instructions
Preheat oven to 375. In large bowl, mix butter, 1/2 cup powdered sugar, vanilla, egg, flour, and nuts with hands until dough holds together. Pinch off bits and roll into walnut-sized balls. Bake on ungreased sheet for 15 min. Coat warm balls with confectioners' sugar.
