White Chicken Chili by Jonathan

To make mild: add 1 4oz can of chopped green chilis remove jalapenos, chipotle, and Cajun seasoning

Ingredients

2 cups onion, diced 2 cups celery, diced 5 garlic cloves, chopped 1/2 cup vegetable oil 1 lb chicken breast, cooked and diced 8 cups water 1 bay leaf 7oz green chilis, chopped 1/2 tsp oregano 1/2 tsp cumin 1/2 tsp dry mustard 1/2 tsp basil 1/2 tsp Old Bay Seasoning 1/4 tsp Cajun Seasoning 1/3 7oz can chipotle in adobo, chopped 4 tbsp chicken base 1 pickled jalapeno, chopped 2 lbs white beans, soaked overnight 1/2 cup heavy cream 1 cup carrots, shredded 16oz sour cream

Instructions

Saute onion, celery, and garlic in oil. Add everything up through the pickled jalapeno to a large stockpot and simmer for 1 1/2 hours. Add beans and heavy cream. Simmer for 1 more hour. Serve garnished with sour cream and carrots.
