Butter cookies by Ed

Ingredients

1 cup (227g) unsalted butter, softened 1 cup (200g) granulated sugar 1 large egg 2 teaspoons vanilla extract 2 1/2 cups (300g) all-purpose flour 1/2 teaspoon baking powder 1/4 teaspoon salt

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
Prepare the Dough: In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy. This should take about 3-5 minutes using an electric mixer on medium speed.
Add the Wet Ingredients: Beat in the egg and vanilla extract until well combined.
Mix the Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the butter mixture, mixing until just combined. Avoid overmixing to keep the cookies tender.
Shape the Cookies: If you have a cookie press, fill it with dough and press out shapes onto the prepared baking sheets. Alternatively, roll the dough into small balls and flatten them slightly with the bottom of a glass or a fork. You can also use cookie cutters for different shapes.
Decorate (Optional): If desired, sprinkle the tops of the cookies with granulated sugar or colorful sprinkles for a festive touch.
Bake: Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Keep a close eye on them, as baking times can vary depending on the size and thickness of your cookies.
Cool: Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Serve and Enjoy: Once cooled, the cookies are ready to be enjoyed. Store them in an airtight container at room temperature for up to a week.
