Teriyaki Chicken by
Ingredients
1 chicken, cut into bite-sized pieces
1/4 c. soy sauce
1/4 c. pineapple juice
2 T. sugar
1/2 t. ground ginger
1 T. lemon juice
5 drops Tabasco sauce
1/8 t. garlic powder
1 small can pineapple tidbits or chunks
Instructions
Put chicken into baking dish (a 9” x 13” pan works fine). Mix together soy sauce, pineapple juice, sugar, ginger, lemon juice, Tabasco and garlic powder and pour over the chicken. Pineapple chunks can be spread over the top. This can be done in the morning, and the dish left in the refrigerator. Bake for 1 or 1-1/2 hours (depending on how big the chicken is). Serve with rice.
If you don’t have pineapple juice, you can use orange juice or apple juice. If you have a big chicken, you might want to double the marinade ingredients.
