Brunch Burrito by
Ingredients
1 green pepper, chopped
2/3 cup onion, chopped
2 tablespoons butter
8 large eggs, slightly beaten
1 cup cheddar cheese, shredded
1 cup cooked potato, cubed
1 cup picante sauce
8 flour tortillas
Instructions
Cook green pepper and onion in butter in 10-inch skillet until onion is tender, but not brown. Add potatoes and cook about 1 -2 minutes. Combine eggs and cheese, add to the skillet. Cook over medium heat, stirring frequently, until eggs are set and cheese has melted. Remove from heat.
Spread about 1 tablespoon of picante sauce over tortilla, then spoon egg mixture (about 1/2 cup) onto the center of each tortilla. Fold up ends, then fold two sides over egg mixture. Place in a lightled greased 13 x 9 x 2-inch baking dish. Top with remaining picante sauce. Bake at 350F for about 10 minutes or until hot.
Serve with additional picante, fresh salsa, and/or sour cream.
