Oatmeal Cookies (GF, sugar-free) by
Ingredients
1 1/4 cup coconut or almond flour
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
3/4 cup butter
1/3 cup Stevia baking blend
2 eggs
1 tsp. vanilla
2 /12 cups quick-cook oatmeal
1 cup raisins
1 cup chopped nuts (optional)
Instructions
Preheat oven to 375 F.
Sift flour, baking powder, baking soda, and salt and set aside.
In large bowl, cream butter. Gradually add Stevia baking blend and cream well. Add eggs and vanilla and beat well. Gradually blend in dry ingredients. Stir in oatmeal, nuts and raisins.
Drop dough by rounded teaspoonfuls onto nonstick baking sheets. Bake for 10 to 15 minutes. Store cool cookies in lightly covered container.
