Pineapple Squares by viper

Ingredients

Crust: 2 cups all-purpose flour 3/4 cup margarine, melted 1/3 cup powder sugar 1/4 tsp salt 1/2 cup dried pineapple chunks Filling: 1 (8 oz.) neufchatel cheese, softened 1/2 cup sugar 2 eggs 2/3 cup unsweetened pineapple juice 1/4 cup all-purpose flour 1 (20 oz.) no sugar added, pineapple, crushed with juice Topping: 1 (8 oz.) cool whip

Instructions

Crust: Beat flour, margarine, sugar, salt and dried pineapple together.

Pour into a 13 x 9 x 2 inch baking pan. Bake at 350 degrees for 10 minutes.

Cool completely.

Filling: Mix all ingredients together.

Pour over the crust.

Topping: Spread cool whip over the filling layer.

Decorate.
