Southern Fried Cabbage by Ed

Ingredients

1 lb bacon, chopped 1 white onion, chopped 2 cloves garlic, minced 1 head green cabbage, cored and chopped into bite-sized pieces 1/2 teaspoon paprika 1/4 teaspoon cayenne pepper (optional) Kosher salt and freshly ground black pepper, to taste

Instructions

In a large skillet over medium heat, cook bacon until crispy. Remove to a paper towel-lined plate to drain, but leave drippings in pan.

Add onion to skillet and cook until soft, 6-8 minutes. Add garlic and cook 1 minute more. Add chopped cabbage, along with paprika, cayenne pepper (if using), and season with salt and pepper.

Cook, stirring frequently, until cabbage is tender, 8-10 minutes. Add bacon back to skillet and stir to combine.
