chocolate chip cookie cake by
Ingredients
3/4 cup unsalted butter softened 1 1/2 sticks
1 cup light or dark packed brown sugar
1 large egg plus 1 egg yolk
2 tsp vanilla extract
2 cups all purpose flour spooned and leveled
2 tsp corn starch
1 tsp baking soda
1/2 tsp salt
1 1/2 cups semi sweet chocolate chips
stand mixer with paddle attachment
separate bowl for dry ingredients and hand whisk
9" pie pan sprayed with baking spray
Instructions
Set butter out for 45 minutes to get soft.
Once the butter is soft, heat the oven to 350 f , and spray the baking pan and set it aside.
In the bowl of your stand mixer, beat butter on high for one minute, next add in the brown sugar, beat on high for one minute to combine. Add in egg, egg yolk , and vanilla. Mix well , scrape the side of the bowl and mix again.
In a separate bowl combine all of the dry ingredients , then add to the wet ingredients mixing unto fully combined. Manually fold in chocolate chips.
Press the cookie dough into the pie pan and bake 20-25 minutes.
Let cool 15 minutes, remove from pie pan and cool on a rack, cut and serve. store the rest in airtight container on counter for a week.
