Pancakes and Eggs by
Ingredients
1 egg
4 egg whites (about 3/4 c.)
1 c. almond meal/flour
2 drops stevia extract
1/4 t. vanilla extract
1/4 t. salt
1/2 t. baking powder
Instructions
Mix egg whites and extracts in small bowl.
Mix almond meal, salt and baking powder in medium bowl. Add egg white mixture and stir just until mixed.
Place 1/4 c. dollop of mixture on medium heat skillet, flipping when edges begin to look dry. (Note: if your mixture is too thick, it will dry out quickly and crumble. If your mixture is too thin, it will burn before your edges form.)
Repeat until mixture is gone.
Fry egg to desired firmness or scramble.
Stack pancakes *about 5* on plate and top with fried egg.
