Spinach Pie (Torta Pascualina) by Kraus Family

Ingredients

1 unbaked pie shell and crust for top 2 10 oz. pkgs. frozen spinach, thawed and squeezed thoroughly 1 onion, chopped and sautéed in 2 T. oil until tender 1/4 t. oregano 1/2 t. salt 2 beaten eggs 1 c. grated Swiss cheese

Instructions

Combine spinach, onion, oregano, salt, eggs and Swiss cheese. Pour into pie shell. Arrange top crust and seal. Cut steam vents. Bake at 350 degrees for 30 to 40 minutes. Serve hot in wedges.
