Chocolate Cashew Slice by

Ingredients
Base
1 cup walnuts
1 cup shredded coconut
1 cup of dates (soak them in hot water for 5 minutes to soften them and drain)
1 pinch of salt
Chocolate Slice
1 cup raw cashews
2 tbs raw cacao powder
4 tbs coconut oil melted
2 tbs rice malt syrup
Pinch of salt
Instructions
1. Blitz all ingredients in your food processor until all combined. This took me about 4 pulses in the Vitamix.
2. Press and smooth into the bottom of a round cake tin lined with plastic-wrap and pop into the freezer while you make your chocolate topping
3. Blitz the cashews in your food processor until it resembles a smooth powder (very fine)
4. Place into a small bowl, add remaining ingredients and stir to combine
5. Spoon chocolate mixture over the base, smooth with your fingers or the back of a spoon and place back into the fridge to set (about 1-2 hours)
6. Slice and enjoy. I know you’ll LOVE it.
