Spaghetti a'la Carbonara by
Ingredients
- pasta: 250 g
- ground pork meat: 400 g
- bacon: 50 g
- eggs: 2
- cheese: 1 tbsp
- grounded pepper: 1 tsp
- garlic: 2 cloves
- salt, pepper, smoked paprika (for flavouring the raw meat)
- lard: 1.5 tbsp
Instructions
1. Slice the garlic
2. Chop the bacon and add spices.
3. Spice the ground meat.
4. Scramble eggs with cheese
5. Boil the pasta almost al dente and save the water for later.
6. Meanwhile fry the bacon, garlic and grounded pepper. Add lard and grounded meat. Fry some more.
7. When meat is ready and spaghetti is almost al dente, add 150+ ml of water from the pasta to eggs (slowly) to temper them, and add pasta to the meat.
8. Add 150+ ml of the water from the pasta to the meat & spaghetti.
9. When spaghetti is ready (al dente), turn off the heat and start pouring the eggs mixture to the spaghetti.
Carefully stir, not to make scrambled eggs, but to make a thick sauce.
If needed turn the heat on very low.
