Ingredients
Dressing:
1/4 small bunch cilantro, minced
1/2 lime, juice
2 tbsp rice vinegar
1 tbsp GF soy sauce (or liquid aminos)
1 tbsp honey
1/8 tsp crushed red pepper
Other:
1/2 medium red onion
2 cucumbers
Instructions
Whisk together cilantro, vinegar, lime juice, soy sauce, honey, and crushed red pepper.
Peel and thinly slice onion. Wash, trimends, halve lengthwise, and thinly slice cucumbers into half rounds.
Add everything to bowl with dressing and toss.
