Eggs in a basket by
Ingredients
1/2 loaf of thin sliced bread
6 eggs
1/2 stick of butter
2 packs of sliced lunch meat
1 tbsp salt
1 tbsp black pepper
2 sausages*
1 cup mushrooms*
2 tomatoes*
3 slices yellow cheese
Instructions
Preheat oven to 200 C.
Butter muffin pan for as many you are making.
Stencil bread with cup to make small discs, place one disc in each buttered area. Cut lunch meat in 1/2 and place vertically, flat side down to form a 'flower' in each muffin area 3-4 slices in each. Next you can use diced, grilled sausage meat or diced mushrooms or diced/drained tomatoes to a 1/4" layer on the bread. Add bit of salt, pepper or other seasoning on top of this layer. Crack one egg into each muffin area and sprinkle with salt/pepper.
Place entire pan in oven, middle rack for 20 min max (a bit less to minimize egg bubbles and hardening of yolk.
