Szechuan Beef or Chicken with Scallions by LoLo

Ingredients

3/4 lb. beef sliced in bite sized strips (chicken breast or pork) 2 bunches scallions 3-4 cloves garlic, crushed MARINADE: 5 Tbl. Soy sauce 1tsp. Sugar 1 tsp. crushed red pepper or to taste 2tsp Cornstarch 4 tsp. oil 1 tsp ginger SAUCE: 4 T. Soy sauce 4 T. Marsala 2 tsp. sugar 2 T. Cornstarch dissolved in 1/2 cup water 4 tsp. oil 4 tsp. hoisin sauce ( optional)

Instructions

Mix meat with marinade. Set aside for 30+ minutes. Put some oil in a wok or skillet and heat until very hot, then add garlic. As soon as it starts to brown, add the meat with marinade and stir rapidly until red disappears. (1 minute) Add the scallions, then the sauce. Stir fry for 1 minute. Add water if needed for sauce. Serve over sticky, jasmine or basmati rice.
