one pot chicken and yellow rice with peas by janine

Ingredients

• 8 boneless chicken thighs or breasts cut in half to fit in your pot Or bone in thighs or bone in breast • 1-2 boxes of Zatarain's yellow rice, or yellow rice of your choosing • Butter for the rice • 1 tbsp of olive oil for chicken Large mixing bowl • 1 tsp onion powder 1 tsp garlic powder 1 tsp of paprika 1 tsp of seasoning salt 1 tsp of meat tenderizer 1 tsp Sazon 1 tsp sofrito • 1 bag of frozen peas Supplies Large pot with lid Large spoon Cutting board and sharp knife if using boneless chicken Measuring cup Measuring spoons

Rinse and cut your chicken to fit into the pot- if you do not rinse then skip this step

add oil to the pot on medium heat so you not burn the pot

once the oil is hot enough add your chicken pieces , season them and cook until browned on all sides, but don't fully cook as it will cook with the rice

add water and butter to the pot and bring to a boil- if the package or box of rice says differently then do it according to the box or package. season the rice as well.

add your rice and bring to a boil

cover your rice and simmer for 20-25 minutes or until the water has fully evaporated. About five minutes before the rice is done add your peas.

Once everything is cooked, and there is no water left mix and serve.
