Wild Rice Casserole (Cardinal's Lodge) by cpeirson

For soup: 1 qt chicken or turkey stock 1/4 c fresh lemon or lime juice 1 clove garlic, crushed white pepper, poultry seasoning, nutmeg to taste 1/2 recipe of wild rice casserole Roux (1/3 c melted butter + 1 c flour), cooked ~~~~~~~~~~~~~~~~~~~~ Bring stock to simmer, add the juice and garlic. Mix in roux until lightly thickened. Add the wild rice casserole, seasonings, and simmer for 30 min.

Ingredients

1/4 c butter 1 small can of sliced mushrooms in butter sauce 1/2 yellow onion, chopped 1 T green pepper, chopped 1/2 clove garlic, minced 1/2 c wild rice 1 1/2 c chicken broth s&p

Instructions

Preheat oven to 350. Saute mushrooms, onion, green pepper, and garlic. Cook for 5 mion. Mix in wild rice, add broth and season to taste. Bake for 1 hr. Reheats well.
