Fay’s Snowy Melted Potatoes by
Ingredients
8-10 red potatoes skinless and quartered
8 oz. cream cheese
3/4 Cup sour cream
1/2 Cup scallions, minced
1/2 Cup celery minced ( buy already cut up )
1 Tblsp. Fresh Parsley chopped
1/4 Cup melted butter
1/4 tsp. Garlic powder
1 tsp. Salt
Pepper to taste
1/2 tsp. Paprika
2 Tablsp. Butter
Preheat oven to 375 degrees
Instructions
1. Cook potatoes in salted boiling water until tender.
2. Drain and return to pot over low heat- shaking to dry.
3. In large bowl of Kitchen Aid Mixer cream together cream cheese and sour cream.
4. Add hot potatoes a few at a time and continue beating at high speed until light and fluffy.
5. On Low speed add celery, scallions, parsley, 1/4 cup butter, garlic, salt and pepper.
6. Spoon into 2 1/2 or 3 quart baking dish.
7. Sprinkle with paprika and dot with 2 tablsp. Butter
8. Bake at 375 for 25 minutes or until top is golden.
