Beth’s Pasta Primavera by
Ingredients
Spiral cut zucchini- I usually buy 2 containers
Fresh vegetables- carrots, onions, broccoli, red peppers, yellow squash, pea pods, etc...
A jar of Alfredo sauce
Olive oil
Grated Parmesan cheese
Instructions
1. Chop up the veggies
2. Saute’ the veggies in olive oil in a skillet
3. When the veggies are mostly done, saute’ the zucchini ( I usually snip the zucchini to cook faster
4. When the zucchini is mostly done, warm the Alfredo sauce in a pot
5. Add zucchini to the cooked veggies.
6. Dish the mixed veggies into a bowl and spoon the Alfredo sauce on top and serve.
7. Sprinkle the Parmesan cheese on top.
