Spinach Salad with Strawberries & Lemon Dressing by

Ingredients
1 10 ounce bag of fresh spinach, washed and stems removed
2 cups sliced fresh strawberries
1/2 cup sliced red or Vidalia onion
1/3 cup fresh lemon juice (about 1 1/2 lemons)
zest from 2 lemons
1/4 cup Truvia
1 tablespoon TCO
dash freshly ground pepper
1 tablespoon freshly grated parmesan cheese
Instructions
Directions:
Combine spinach, onion, and strawberries. Whisk together lemon juice, Truvia, zest, oil, and pepper. Let sit while sugar dissolves. Just before serving, pour dressing over salad ingredients and sprinkle with fresh parmesan.
