Bombay potato by
Ingredients
½ tsp ground cumin
1 tsp turmeric
1 tsp ground coriander
1 tsp garam masala
1 tsp chili powder
1 tsp garlic powder
50g butter
5cm/2in piece fresh ginger, grated
2 large potatoes, peeled, and cut into smallish cubes
½ cup tomato puree
Salt/Pepper
50-100ml water
1 bunch coriander, roughly chopped
Instructions
1. Par boil the potatoes for around 5 minutes.
2. Heat the butter on a medium heatin a frying pan, when it's melted add the dry ingredients and ginger and fry for a minute.
3. Add the potatoes and fry slowly for around 15 minutes then stir in the tomato puree, fresh coriander then slowly add some water to make a sauce of your desired thickness.
