Gluten free chicken parmigiana by
Ingredients
Throw away roasting pan, 16 0z marinara sauce or homemade sauce, 6 slices of mozzarella cheese, 2 large eggs, 2 cups of gluten free Italian seasoned bread crumbs, 1/4 cup of olive oil, frying pan, two deep bowls, fork, milk, 6 boneless skinless chicken breasts, rolling pin or meat cleaver, parchment paper, cutting board.
Instructions
In one bowl add bread crumbs in another bowl egg and milk. Preheat oven to 350 degrees, heat olive oil in pan. Rinse chicken put in between parchment paper and beat to 1/4 inch thickness. Dredge chicken in egg mixture then bread crumbs fry on each side till golden brown. Remove from pan and add into roasting pan cover with cheese and sauce. Cook for 15 minutes or until cheese is melted. Serve with pasta or a vegetable.
