Egg in an Avocado by tracylolson

Ingredients

2 eggs 1 avocado salt and pepper, to taste cilantro, optional garnish

Instructions

Preheat oven to 365°.

Take a ripe avocado and slice it in half. Remove the pit.

Crack a small egg into the hole. There may be a little excess egg white dripping out.

Place the egg filled avocado on a baking pan and insert in oven.

Bake for about 15 minutes, or however you like your eggs.

Remove from oven and sprinkle some ground pepper and cilantro over the avocado.
