Apple and Walnut Cake - paleo by melc

Ingredients

500g grated organic apples 2 cup almond meal 1/2 cup ground linseed 4 eggs 4 Tbsp honey 1 tsp cinnamon 1 tsp ground ginger 1 cup sultanas 3/4 cup walnut pieces 1 rounded tsp baking soda 1/2 tsp vanilla bean paste Extra cinnamon and ginger, to dust.

Instructions

Grease a spring-form cake tin with coconut oil and preheat the oven to 160 degrees celsius.

Combine dry ingredients in a large mixing bowl. In a separate bowl, whisk eggs and honey together. Add this wet mixture, and the grated apple, to the dry ingredients and mix until well combined.

Gently fold through the sultanas and walnuts.

Pour cake mixture into the cake tin and spread evenly. Bake in the oven for 50 minutes, or until the cake has slightly come away from the sides of the cake tin and a skewer inserted comes out clean.

Leave cake to cool in the tin to avoid crumbling, and then gently remove. Dust with a teaspoon or two of cinnamon and ginger for prettiness and delicate spicy flavour.
