Minestrone Soup by Kira Matrejek

Ingredients

1 can del monte diced tomatos (italian - with basil, garlic, and oregano), drained 1 can white beans (navy beans?) 1 can chicken broth (or vegetable broth) 1/4 cup carrots, shredded in food processor 1/2 cup ditalini (small tube) pasta 1 small onion, chopped 1-2 cloves garlic, chopped olive oil shredded parmesan

Instructions

Add olive oil to saucepan; sautee onions, carrots, and garlic until onions turn transparent. Add chicken broth, tomatos, pasta, and beans. Cook 5-10 minutes, until pasta is cooked.

Serve with a bit of shredded parmesan on top. I also like it with crostini - good for dipping in the soup. :)
