Lemon-Glazed Sweet Potatoes by
Ingredients
3 med sweet potatoes
1 tbs unsalted butter
2 tbs dark brown sugar
1/2 c fresh lemon juice
1/8 tsp ground cinnamon
1/8 tsp kosher salt
Instructions
1. Prepare over to 325.
2. Peel sweet potatoes and cut into 1-inch thick slices.
3. Butter a 13 x 9 baking dish and arrange sweet potato slices in a single layer.
4. Mix brown sugar, lemon juice, cinnamon, and salt in a small bowl. Pour evenly over potatoes, cover with aluminum foil, and bake until potatoes are fork-tender, (about 45 minutes.)
5. Remove foil, return potatoes to over and bake until glaze becomes syrup, and about 5 more min. Serve immediately. (The glazed sweet potatoes may be cooked in advanced, stored in refrigerator in a warm oven.)
