Mushroom Gravy by

Small onion, diced
1 pound sliced mushrooms
2 cloves garlic, minced
2 cups veg broth, divided
1 Tbsp miso
1 Tbsp tamari
1 Tbsp each flour and cold water (mix in small bowl)
Splash cooking sherry

Water sauté onion and garlic.
Add sliced mushrooms, sauté till well softened.
Add one cup of broth, simmer.
In separate bowl, mix remaining cup of broth, miso paste, tamari and flour mix. Add to mushroom mixture along with sherry.
Simmer and taste, add pepper or splash of balsamic vinegar if you like.
I like to remove about half the gravy and blend smooth before returning it to the pan.
Serve over potato, rice, pasta or any vegetable
