Pineapple Sheet Cake by
Ingredients
cake:
2 cups flour
2 cups sugar
2 t. baking soda
1/2 t. salt
2 eggs
1 t. vanilla
1 20 oz. can crushed pineapple in heavy syrup, not drained
1 cup chopped walnuts
frosting:
8 oz. softened cream cheese
1 box powdered sugar 3 and 3/34 cups (or 3 1/2)
1/2 cup butter
1 t. vanilla
Instructions
Stir together all dry ingredients. Add eggs, vanilla, and pineapple. Mix thoroughly. Stir in chopped walnuts. Bake in 12 by 17 greased sheet cake pan.
Bake at 350 approx. 15 - 18 minutes, until top is lightly browned. Important not to underbake as cake can get too moist.
Completely cool before frosting.
