Stuffed Poblano Peppers by Allen Neighborhood Center

Ingredients

Veggie Box poblano peppers 1 can black beans 1/4 teaspoon of Salt 1 cup shredded Mexican cheese blend, divided 1 medium tomato, finely chopped 1/2 cup of Veggie Box onions, chopped 1 tablespoon olive oil

Instructions

Preheat oven to 425. Cut peppers lengthwise in half, remove the seeds. Place in foil-lined baking pan. Mix together green onion, tomato, 1/2 cheese, and beans. Bake for 10 min. Remove and top with the other half of the cheese, baking another 5 minutes.
