RISOTTO - MUSHROOM by
Ingredients
1) 4 tbs unsalted butter
2) 3 cloves minced garlic
3) 1 onion diced
4) Salt and pepper to taste
5) 1 quart chicken broth
6) 1 1/2 cup Arborio Rice
7) 1 1/2 lbs mushrooms, sliced
8)4 tbs olive oil
9) 2 tsp soy sauce
10) 1/4 cup heavy cream
11). 1 Cup of frozen Peas (optional) Let it thaw while cooking
11) 1/2 Cup ounce grated parmigiano cheese
Instructions
Heat olive oil and butter in the base of the Instant Pot
Add mushrooms and season with salt and pepper. Cook about 8 minutes
Add onion, garlic and stir frequently.
Add rice and 1 cup of broth and cook until rice is evenly coated, about 3 to 4 minutes
Stir in Soy Sauce.
Close up cooker and pressure cook for 5 minutes.
Do a quick release and add in cream, peas and cheese, stir and serve
.
