2 cups cooked brown rice
2.5 cups non dairy milk, divided
4 Tbsp cornstarch
2 tsp vanilla
1 1/2 tsp ground cinnamon
Pinch salt
1/2 cup raisins
2 tbsp maple syrup, opt

Add rice and 2 cups milk into a pot and bring to a boil, reduce heat to low and let simmer for 10 minutes, stirring often.
Add remaining 1/2 cup milk and cornstarch to a small bowl and whisk to combine and create a slurry. Add slurry and raisins to the pot, stir to combine, and let it simmer for 2 minutes, or until it thickens.
Add the vanilla, cinnamon, and salt and stir to combine. Add maple syrup to make it sweeter, if desired.
Enjoy warm or cool covered for an hour first.
