Bean Salad w/ Tuna & Lemon Dijon Dressing by Misspotae

Ingredients

1 Can tuna in water 1 19oz can of mixed beans or 2 cups reconstituted bean mix 1 can of whole corn 1 rib celery diced 1 green onion finely sliced 1/2 cup chopped parsley Dressing mixed separately: 1 whole lemon, juiced and rind finely grated 1 1/2 tbsp olive oil 1/2 tsp sugar 1/4 cup chopped dill 2 tbsp dijon mustard Salt and pepper to taste

Instructions

Break up tuna and then mix in beans and other salad ingredients

In a separate bowl, mix together the dressing ingredients and stir well. Taste, adjust and then mix into the bean salad.
