RISOTTO - PESTO CHICKEN by
Ingredients
1 1/2 lb Chicken Breast cut into chunks
2 Garlic Cloves
1 Onion
4 Cups Chicken Broth
1/2 Cup Pesto
1 1/2 Cups Arborio Rice
Salt and Pepper
2 tbs Butter
Instructions
Heat the Instant Pot Sauce setting and add 2 tbs butter when it's ready. Melt the butter then add the onion and garlic. Sauce for 3 to 4 minutes.
Add the rice and stir.
Add 1 Cup of Chicken Stock, stir then add the rest after a minute or so.
Add the Pesto
Add the chicken
Set intant pot to Chicken for 10 minutes and cook. Do a 10 minute natural pressure release then open the pressure valve.
Stir and serve
