2 1/4 cups of all purpose flour
1 1/3 cups of sugar
3 tsp baking powder
1/2 tsp of salt
1/2 cup of shortening
1 cup of milk
1 tsp of vanilla
2 large eggs

baking spray
cupcake liners
Stand mixer with bowl and paddle attachment
Instructions
preheat oven to 350 degrees and line cupcake pans with liners and spray with cooking spray to prevent sticking
in a large mixing bowl combine flour, sugar, baking powder and salt. Add shortening, milk, and vanilla mix for one minute on medium speed then add eggs and mix for one more minute. fill cupcake liners half full with a spoon and then bake for 20-25 minutes or until a toothpick comes out clean.
