Spinach and Mushrooms by suhu

Ingredients

Ingredients 1/3 cup water 2 Tbsp soy sauce 2 Tbsp sherry or white wine 1 onion, sliced and separated into rings 1/2 pound sliced fresh mushrooms (or more if no enoki) 1 6 ounce bag baby spinach 1/2 cup enoki mushrooms Dash Tabasco sauce Fresh ground pepper

Place water, soy and sherry in a large nonstick frying pan. Boil. Add onion and mushrooms. Cook, stirring occasionally, for 8 minutes. Add remaining ingredients and cook stirring frequently, until the spinach has wilted, about 2 minutes.
Serve as side dish or on top of baked potatoes, grains, or pasta.
